刘志刚,博士,教授,博士研究生导师。国家教育部“长江学者奖励计划”青年学者,德国“洪堡学者”,美国“康奈尔大学唐氏·康奈尔-中国学者”。入选“陕西省高校科协青年人才托举计划”,曾任美国康奈尔大学食品科学系客座教授。现任西北农林科技大学食品科学与工程学院食品营养与健康系副主任,食品营养与卫生教研室主任,兼任德国人类营养研究所访问研究员、 Frontiers in Aging Neuroscience 杂志副主编。研究方向:食品营养与人类健康。

三、主要研究方向

1. 食品营养功能组分发掘与功效评价:结合我国特色食材资源和全民营养健康现状,发掘果蔬、粮油等传统食品原料及西部特色农产品中具有调节糖脂代谢、改善脑健康问题等生理功能的多酚和类胡萝卜素类功能成分,发掘有益肠脑健康的益生菌、益生元;

2. 特色膳食模式改善脑健康作用机制:针对生命早期1000天神经系统发育、阿尔兹海默症等神经退行性病变、压力引起的焦虑抑郁等脑健康问题,探究高膳食纤维饮食、间歇性禁食、氨基酸限制饮食等特色膳食模式通过影响肠道微生态结构、调节糖脂代谢平衡,进而干预中枢神经系统功能的营养干预作用,揭示膳食成分与结构通过影响外周系统进而影响脑健康的“肠-脑”轴机制。
