刘志刚,博士,教授,博士研究生导师,西北农林科技大学食品科学与工程学院食品营养与卫生教研室主任。研究方向:食品营养与人类健康。

一、个人简介

入选“陕西省高校科协青年人才托举计划”,德国“洪堡学者”,美国“康奈尔大学唐氏·康奈尔-中国学者”,现兼任美国康奈尔大学食品科学系客座副教授, Frontiers in Aging Neuroscience 副主编。近年来在《中国食品学报》、 Nature Communications 、 Redox Biology 、 Molecular Nutrition & Food Research 、 Journal of Agricultural and Food Chemistry 等食品营养及综合领域国内外高水平杂志发表论文60余篇,总引次数达1100余次,H-index 20, i10-index 33。近5年来主持包括国家自然科学基金面上项目、青年项目、陕西省重点研发计划、中国博士后特别资助、企业横向课题等科研项目10余项,获2019年陕西省科学技术进步奖二等奖及2018年陕西省高等学校科学技术一等奖(均排名第二)等奖项。目前任国家自然科学基金函评专家, Protein & Cell 、 Redox Biology 、 FRBM 、 MNFR 、 JAFC 、 JFF 等食品营养学杂志审稿人。美国营养学会、欧洲自由基研究学会会员。多次受邀参与多个国际重要学术会议,包括美国营养学会(American Society of Nutrition)、美国加州自由基协会(Oxygen California Club)以及戈登会议(Gordon Research Seminar & Gordon Research Conference)、国际脂质科学与健康研讨会等国际会议并做学术报告。

三、教学内容

本科课程:《食品营养学》、《食品化学安全性分析与控制教学实习》、《食品学科前沿讨论课》;

研究生课程:《高级食品化学》、《食品科学Seminar》。

四、主要研究方向

主要从事食品营养与人类健康研究方向,包括:

1. 食品营养功能组分发掘与功效评价:结合我国特色食材资源和全民营养健康现状,发掘果蔬、粮油等传统食品原料中具有调节代谢、改善脑健康问题(情绪、社交、认知功能障碍等)等生理功能的可溶性膳食纤维、多酚和类胡萝卜素类功能成分;

2. 新型膳食模式对代谢综合征及神经退行性疾病的干预作用机制:利用多组学系统生物学研究方法探究限制性饮食模式对肥胖、糖尿病等代谢性疾病,以及衰老相关的阿尔兹海默症、帕金森症等神经退行性疾病的改善作用,揭示间歇性禁食、特殊氨基酸限制饮食通过调节“肠-肝-脑”轴调节机体微生态免疫平衡、干预系统性胰岛素抵抗、改善与衰老相关的中枢神经系统功能紊乱的分子机制。
