刘志刚,博士,教授,博士研究生导师,陕西省精准营养与健康研究院院长。入选教育部 “青年长江学者”(食品营养与健康岗位,2021.4-2024.4),德国“洪堡学者”,美国康奈尔大学“唐-中国学者”。担任中国食品科学技术学会第四届青年委员会委员,陕西省营养学会常务理事,中国营养学会药食同源产业分会,中国食品学会特殊食品分会理事,中国生物物理学会肠道菌群分会理事,欧洲自由基研究学会会员(SFRR-Europe), Food and Humanity Section  主编、 Frontiers in Aging Neuroscience ,  Frontiers in Aging Psychiatry ,  Frontiers in Neuroinflammation and Neuropathy Editor 副主编、 iMeta 青年编委、《中国食品学报》青年编委。研究方向:食品营养与人类健康。

三、主要研究方向

主要从事食品营养与人类健康研究方向,包括:

膳食模式与肠脑健康互作机制:围绕中枢神经系统和肠道功能的互作整合,针对阿尔兹海默症等神经退行性病变、压力引起的焦虑抑郁、生命早期1000天神经系统发育等脑健康问题,探究高膳食纤维饮食、间歇性禁食、氨基酸限制饮食等特色膳食模式通过影响肠道微生态结构、调节糖脂代谢平衡,进而干预中枢神经系统功能的营养干预作用,揭示膳食成分与结构通过影响外周系统进而影响脑健康的“肠-脑”轴机制;

食品营养功能组分发掘与功效评价:结合我国特色食材资源和全民营养健康现状,发掘果蔬、粮油等传统食品原料及西部特色农产品中具有调节肠道微生态、糖脂代谢稳态、改善脑健康问题等生理功能的食物功能成分,发掘有益肠脑健康的植物多酚、益生菌、益生元等。
